The people behind the cattle breed have launched a new marketing campaign, calling it a natural wonder, to try and get Aussies to order it by name at their local butcher and watering hole.
GM Simon Gleeson says the meat is tender and flavourful because of the temperament of the cattle, adding that it’s a more sustainable breed perfectly suited to thrive through drought and flooding rain.
On Friday, award-winning chef Andrew Mirosch was on hand to cook three courses to delight palates in Brisbane, including an 18 hour slow-cooked beef brisket.
